The Japanese amberjack or yellowtail, Seriola quinqueradiata, is a species of jackfish in the family Carangidae. It is native to the northwest Pacific Ocean, from Japan to Hawaii. It is greatly appreciated in Japan, where it is called Hamachi or buri. Yellowtail possesses a mild flavour and firm texture. These amazing wild-caught Hamachi fillets come with the skin on in 200-250g vacuum-packed portions.

Amberjack contains high quantities of niacin and vitamin A and riboflavin, vitamin B6, and selenium. This fish is also rich in omega-3 fatty acids, which can improve cardiovascular health and brain function. Moreover, Amberjack is also an excellent source of potassium, important for energy levels and healthy red blood cells.

Amberjack/Hamachi may be popularly used in sushi, but you can also cook it by broiling, baking, or sauteing. This fish is becoming more popular in various cuisines, and it is an important ingredient in the European dish bouillabaisse from Provence. Bouillabaisse was traditionally made with large quantities of fish from local waters and cooked by residents at Marseilles to help recover fish stocks.
