Striped bass (Morone saxatilis) or rockfish are huge fish with stunning black stripes running down their silvery body that are sustainably line-caught off the shore of Long Island. With crisp, white flakes that hold up nicely when cooked, the fillets offer a rich flavour. Each one weighs 170-225g and is vacuum-sealed.

Striped bass is high in Omega-3 fatty acids, which are known to aid heart and brain health. It’s also high in lean protein, vitamins B and D, and minerals, all of which help build strong bones and muscles and are necessary for cell regeneration, making it an excellent complement to a balanced diet.

The striped bass is regarded as royalty in the Atlantic. Striped bass fillets, which have a special place in Montauk’s history (and hearts), hold up well to a variety of treatments, one of which is poached with a topping of fresh tomatoes, basil, and garlic. Light fruity wines, such as Riesling or Sauvignon Blanc, go well with this dish.
