    • 1/4 cup chopped fresh parsley
    • 1/4 cup chopped fresh basil
    • 1/4 cup chopped fresh oregano
    • 1/2 cup chopped anchovies
    • 1/2 cup dry white wine
    • 1/2 pound spaghetti
    • 1/4 cup freshly grated Parmesan cheese
    • Salt and freshly ground black pepper, to taste

    Method

    • Bring a large pot of salted water to a boil.
    • Add spaghetti to the boiling water and cook until al dente according to package instructions.
    • While pasta cooks, set a large skillet over medium heat.
    • Add extra-virgin olive oil to the skillet; heat until shimmering.
    • Add minced garlic and crushed red pepper flakes to the oil; stir until fragrant, about 30 seconds.
    • Add chopped anchovies to the skillet and cook, stirring, until they dissolve into the oil.
    • Pour in dry white wine; simmer gently to reduce by half.
    • Add drained capers to the pan; stir to combine.
    • Season with salt and freshly ground black pepper to taste.
    • Once pasta is al dente, reserve 1/2 cup pasta water, then drain spaghetti.
    • Add drained pasta directly to the skillet; toss to coat in sauce.
    • If sauce needs loosening, add reserved pasta water a little at a time to reach desired consistency.
    • Remove skillet from heat; add chopped fresh parsley, basil, and oregano.
    • Toss again thoroughly to distribute herbs and flavors.
    • Divide pasta among serving plates or bowls.
    • Top each portion with freshly grated Parmesan cheese.
    • For serving, garnish with additional fresh herbs and a drizzle of extra virgin olive oil if desired.
