What Is It?
The oyster has long been recognized as a popular delicacy. In its hard, hinged shells lies the delicate, edible body, often consumed raw, which can vary greatly in flavour and texture. Three species of oyster are already recognised in the UK market. The local oyster, Ostrea edulis, as well as the Pacific oyster, Crassostrea gigas, are produced in the United Kingdom.
