What Is It?

This big sea snail is located on rocks or among seaweeds throughout the middle and lower parts of the shoreline. The edible winkle has an oval, spiral shell, typically of a brownish-grey colour. It is composed of circular ridges, darkened lines, and a pointed tip.

Winkles have a sea-like flavour and are fairly meaty. They often are boiled and sold on the seafront as a snack. They are consumed with vinegar with white pepper, by using a pin to take them out of their shells. Or you can mix it with garlic butter, serving it with nice crusty bread.

Processing

Winkles are akin to whelks, also identified as periwinkles. They are present in the intertidal region of several areas of England and Ireland and other parts of Europe. They are handled in the same manner as whelks in terms of collection, storage and cooking method. They are checked and thoroughly inspected until they are in our manufacturing facility. The cleaned and cooked winkles are packed in polythene bags before the freezing process, or that they are frozen unwrapped then glazed and packed thereafter.

Most of the winkles are harvested or collected by hand, which is a targeted collecting strategy that creates less damage to their habitat. Minimum winkle sizes may vary between counties, but choosing the bigger sized winkles, measuring more than 2cm, enables them to breed. Choose winkles gathered in areas that are well maintained by hand-gathering techniques.

Winkles are easy to prepare. Just toss them in boiling water with a bit of salt for around 7 minutes, then drain, and remove the winkle meat with the use of a toothpick or pin then pull gently. Put a little oil after they are cooked to make them glossy then eat with salt and vinegar.
