Frozen fillets enable you and the chefs in your favourite restaurants to defrost and use just what you're going to eat, reducing wastage. Our barramundi could last up to 2 years in the freezer, with no effect on texture, freshness or flavour. It defrosts in just 15 minutes, but it can also be cooked directly from the freezer.

How do you defrost barramundi?

Start with firmly frozen barramundi, no need to pre-thaw in the fridge. And don't remove the vacuum pack before thawing. Defrosting "naked" fish down into the water makes it discoloured and tasteless. Just use cold tap water to defrost, reducing the chance of bacterial growth. Immediately use the thawed fish to achieve the best output!

Can I cook fish fillets from frozen?

You may skip the thawing stage and cook the frozen barramundi right out of the freezer. In your recipe, you'll just add a few minutes to the cooking time to compensate for lack of defrosting, then you can poach, steam, roast, broil or barbecue the barramundi right from the freezer!
