    Ingredients

    • 1 lb. haddock fillets
    • 4 strips bacon, diced
    • 1/2 cup grated cheddar cheese
    • 1/4 cup diced onion
    • 2 cloves garlic, minced
    • 1/4 cup dry white wine
    • 1/4 cup bread crumbs
    • 1/4 cup Parmesan cheese
    • 2 tablespoons butter, melted
    • 2 tablespoons chopped fresh parsley
    • Salt and pepper to taste

    Method

    • Preheat the oven to 350°F.
    • Grease a baking dish with butter or non-stick cooking spray.
    • Place the haddock fillets in the baking dish.
    • Top with the bacon, cheddar cheese, onion, garlic, and white wine.
    • In a separate bowl, mix together the bread crumbs, Parmesan cheese, butter, parsley, and salt and pepper.
    • Sprinkle the bread crumb mixture over the top of the haddock.
    • Bake for 25-30 minutes, or until the haddock is cooked through and the topping is golden brown.
