    • 2 John Dory fillets
    • 2 tablespoons olive oil

    • 1 teaspoon fresh thyme, chopped
    • 1 teaspoon fresh rosemary, chopped
    • Salt and pepper to taste
    • 1 lemon, cut into wedges
    • 1 tablespoon butter

    Method

    • Preheat oven to 200°C (390°F)
    • Rinse John Dory fillets under cold water and pat dry with paper towels
    • Place fillets on a parchment-lined baking tray, skin-side down if applicable
    • In a small bowl, combine olive oil, minced garlic, chopped parsley, thyme, and rosemary
    • Season both sides of the fillets lightly with salt and pepper
