    • 4 mackerel fillets

    • 2 cups cherry tomatoes, halved
    • 2 tablespoons capers
    • 2 tablespoons white wine vinegar
    • 2 tablespoons freshly squeezed lemon juice
    • 2 tablespoons chopped fresh basil

    Method

    • Step-by-Step Method for Baked Mackerel with Tomatoes
    • Preheat oven to 200°C (390°F) and line a baking tray with parchment paper
    • Rinse mackerel fillets under cold water and pat dry with kitchen paper
    • Season both sides of the fillets lightly with salt and pepper
