    • 4 mullet fillets
    • 2 tablespoons olive oil

    • 2 tablespoons fresh oregano, chopped
    • 1/2 teaspoon salt
    • 1/4 teaspoon black pepper
    • 2 tablespoons butter
    • 2 tablespoons lemon juice
    • 1/4 cup white wine

    Method

    • Preheat oven to 200°C (400°F)
    • Pat mullet fillets dry with paper towels
    • Lightly oil a baking dish with 1 tablespoon olive oil
    • Arrange mullet fillets in a single layer in prepared dish, skin-side down
    • Season fillets with salt and black pepper
    • In a small bowl, combine minced garlic, parsley, thyme, and oregano

    • Remove baked fillets from oven and transfer to warm plates
    • Spoon garlic-herb sauce evenly over fillets
    • Garnish with additional fresh herbs if desired
    • Serve immediately, pairing with a light salad, steamed greens, or roasted new potatoes for a balanced meal
