    Ingredients

    • 1 plaice fillet (approx. 200g)
    • 1 tablespoon of olive oil
    • 1 teaspoon of lemon juice
    • Salt and pepper to taste
    • 2 tablespoons of chopped fresh parsley
    • 1 tablespoon of chopped fresh dill
    • 2 tablespoons of breadcrumbs
    • 2 tablespoons of grated Parmesan cheese

    Method

    • Step-by-Step Method for Baked Plaice with Herb Crust
    • Preheat oven to 200°C (180°C fan) or 400°F.
    • Place plaice fillet on a parchment-lined baking tray.
    • Pat the fish dry with kitchen paper.
    • Drizzle the fillet with half of the olive oil.
    • Squeeze over the lemon juice.
    • Season both sides of the fillet with salt and pepper.
    • In a bowl, combine breadcrumbs, grated Parmesan, chopped parsley, and chopped dill.
    • Add remaining olive oil to the breadcrumb mixture and mix well.
    • Spread the herbed breadcrumb mixture evenly over the top of the fillet.
    • Gently press the crust onto the fish to help it adhere.
    • Bake in the preheated oven for 12-15 minutes, or until the crust is golden and the fish flakes easily.
    • Remove from oven and rest for 2 minutes.
    • Serve immediately, optionally garnished with extra parsley and a lemon wedge.
    • Pair with steamed seasonal vegetables or a fresh green salad.
