    Ingredients

    • 1 pound jumbo shrimp, peeled and deveined
    • 2 tablespoons olive oil
    • 2 tablespoons freshly squeezed lemon juice
    • 3 cloves garlic, minced
    • 2 tablespoons fresh parsley, chopped
    • 1 teaspoon dried oregano
    • Salt and freshly ground black pepper, to taste
    • 1/2 cup Panko breadcrumbs
    • 2 tablespoons freshly grated Parmesan cheese
    • 2 tablespoons butter, melted

    Method

    • Preheat the oven to 200°C (400°F)
    • Pat the peeled and deveined shrimp dry with paper towels
    • Place the shrimp in a single layer in a baking dish
    • In a small bowl, combine olive oil, lemon juice, and minced garlic
    • Spoon or brush the olive oil, lemon juice, and garlic mixture evenly over the shrimp
    • Sprinkle chopped parsley, dried oregano, salt, and freshly ground black pepper over the shrimp
    • In another bowl, mix Panko breadcrumbs with Parmesan cheese and melted butter until crumbs are evenly coated
    • Evenly scatter the breadcrumb mixture over the shrimp
    • Bake the dish in the preheated oven for 10-12 minutes, until shrimp are opaque and breadcrumbs are golden
    • Remove dish from the oven and let rest for 2 minutes before serving
    • Plate the baked scampi hot, garnished with extra chopped parsley if desired
    • Serve with lemon wedges for squeezing and a light salad or steamed green vegetables on the side
