    • 1/2 cup bread crumbs

    • 2 tablespoons chopped fresh parsley
    • 2 tablespoons mayonnaise

    • 1/2 teaspoon garlic powder
    • 1/2 teaspoon paprika
    • 1/4 teaspoon salt
    • 1/4 teaspoon black pepper
    • 1 egg, lightly beaten
    • 2 tablespoons olive oil

    • Preheat oven to 200°C (400°F) and line a baking sheet with parchment paper.
    • Empty the drained tuna into a large mixing bowl, flake with a fork to separate.
    • In a separate small bowl, finely chop the onion and parsley.
    • In another bowl, measure out bread crumbs, mayonnaise, Dijon mustard, garlic powder, paprika, salt, and black pepper.
    • Prepare the egg by cracking into a small bowl and lightly beating with a fork.
    • Combine chopped onion, parsley, and all dry seasonings with the tuna in the main mixing bowl.
    • Add the mayonnaise, Dijon mustard, and beaten egg to the tuna mixture.
    • Sprinkle in the bread crumbs and mix thoroughly until the mixture is well combined and holds together.
    • Using clean hands or a scoop, form the mixture into evenly sized patties (about 6–8).
    • Brush or drizzle olive oil evenly onto the parchment-lined baking sheet.
    • Place patties onto the prepared sheet, spacing them evenly.
    • Brush the tops of the patties with remaining olive oil for color and moisture.
    • Bake for 10–12 minutes, then flip each patty carefully.
    • Continue baking an additional 8–10 minutes, until golden and cooked through.
    • Remove patties from oven and let cool for 2–3 minutes before serving.
    • For plating: Serve patties stacked or in a fan arrangement, scattered with extra chopped parsley.
    • For serving: Offer alongside a crisp salad or with a small bowl of lemon wedges for freshness.
    • Optionally, pair with a light side sauce, such as low-fat yogurt-dijon dip.
