    • 4 barramundi fillets
    • 2 tablespoons olive oil
    • 2 avocados, diced
    • 2 tomatoes, diced
    • 1/4 red onion, diced
    • 2 tablespoons chopped fresh coriander
    • 2 tablespoons lime juice
    • Salt and pepper to taste

    Method

    • Pat the barramundi fillets dry using paper towels
    • Season both sides of each fillet with salt and pepper
    • Heat a non-stick pan over medium-high heat
    • Add 1 tablespoon of olive oil to the pan and swirl to coat
    • Place the fillets skin-side down (if skin-on), and cook for about 3–4 minutes
    • Flip the fillets carefully, add the remaining 1 tablespoon olive oil, and cook for another 2–3 minutes until opaque and just cooked through
    • While the fish cooks, dice the avocados neatly into small cubes
    • Dice the tomatoes into similar-sized pieces
    • Finely dice the red onion
    • Chop the fresh coriander finely
    • In a mixing bowl, combine the diced avocado, tomato, red onion, and chopped coriander
    • Drizzle lime juice over the salsa mixture
    • Gently toss the salsa ingredients to mix, being careful not to mash the avocado
    • Season the salsa lightly with salt and pepper to taste
    • Once the barramundi is cooked, remove it from the pan and allow it to rest for 2 minutes
    • Spoon a generous portion of the avocado and tomato salsa onto each serving plate
    • Place a barramundi fillet on top of or next to the salsa, skin-side up for presentation if desired
    • Drizzle any remaining pan juices over the fish for extra flavor
    • Garnish with extra coriander or a lime wedge if available
    • Serve immediately while the barramundi is hot and the salsa is fresh
