    Ingredients

    • 4 (6 ounce) barramundi fillets
    • 2 tablespoons olive oil
    • Salt and freshly ground black pepper
    • 1 tablespoon sesame oil
    • 1/4 cup finely chopped onion
    • 2 cloves garlic, minced
    • 1 teaspoon freshly grated ginger
    • 1 (15 ounce) can black beans, drained and rinsed
    • 1/4 cup chicken broth
    • 2 tablespoons soy sauce
    • 2 tablespoons rice vinegar
    • 2 teaspoons sugar
    • 2 tablespoons chopped fresh cilantro
    • 1 teaspoon sesame seeds, toasted

    Method

    • Preheat oven to 375°F.
    • Place the barramundi fillets on a baking sheet and season with salt and pepper. Drizzle with olive oil.
    • Bake in preheated oven for 10-12 minutes, or until the fish is cooked through and flakes easily with a fork.
    • Meanwhile, heat the sesame oil in a large skillet over medium heat. Add the onion, garlic and ginger and sauté for 3-4 minutes, or until the vegetables are softened.
    • Add the black beans, chicken broth, soy sauce, rice vinegar, and sugar. Simmer for 5 minutes, stirring occasionally.
    • Add the cooked barramundi fillets to the skillet and simmer for an additional 2-3 minutes.
    • Serve the barramundi with black bean sauce over cooked rice or noodles. Garnish with chopped fresh cilantro and toasted sesame seeds.
