Preheat the broiler.
Place the perch fillets on a baking sheet and season with salt and pepper.
Drizzle the olive oil over the fillets.
Broil for 8-10 minutes, or until the fish is cooked through.
Meanwhile, melt the butter in a small saucepan over medium heat.
Add the dill, lemon juice, and white wine and simmer for 3-4 minutes.
Pour the sauce over the cooked perch fillets.
Garnish with lemon wedges and serve.
