    Ingredients

    • 1 lb. catfish fillets
    • 1/4 cup mayonnaise
    • 1/4 cup finely chopped celery
    • 1/4 cup finely chopped onion -
    • 1/4 cup finely chopped green bell pepper
    • 1/4 cup finely chopped red bell pepper
    • 1/2 teaspoon garlic powder
    • 1 teaspoon Old Bay seasoning
    • 1/2 teaspoon salt
    • 1/4 teaspoon freshly ground black pepper
    • 1/2 cup plain bread crumbs
    • 1 egg
    • 1/4 cup vegetable oil, for frying

    Method

    • Begin by prepping the ingredients. Rinse the catfish fillets and pat them dry. Chop the celery, onion, and bell peppers into small pieces.
    • Combine the catfish, mayonnaise, celery, onion, bell peppers, garlic powder, Old Bay seasoning, salt, and pepper in a large bowl. Mix the ingredients until they are evenly combined.
    • Add the bread crumbs and egg to the mixture and mix until the ingredients are well incorporated.
    • Form the mixture into small patties, about 3-4 inches in diameter.
    • Heat the vegetable oil in a large skillet over medium-high heat.
    • Place the patties in the skillet and cook for 3-4 minutes per side or until the cakes are golden brown and cooked through.
    • Remove the cakes from the skillet and serve warm.
