    • Step-by-Step Method for Cheese-Mayo Baked Mussels
    • Preheat oven to 220°C (428°F) or set grill/broiler on high
    • Inspect the 12 green mussels on half-shells, pat dry with paper towel
    • In a small bowl, mix 6 tablespoons mayonnaise, 1/2 teaspoon lime juice, 1/2 teaspoon chili sauce, and 1 teaspoon sugar until smooth
    • Spoon or pipe the mayo mixture evenly over each mussel, covering the meat surface
    • Sprinkle shredded Parmesan cheese (2 tablespoons or more) generously over each mussel
    • Arrange the prepared mussels in a single layer on a baking tray or oven-safe dish
    • Bake or broil for 6–8 minutes, until the cheese is melted, bubbly, and starting to brown at edges
    • Carefully remove mussels from oven and allow to cool for 1 minute
    • Top each mussel with a small amount of tobiko (fish roes)
    • Sprinkle finely chopped parsley (1/2 teaspoon) over all mussels for color and aroma
    • Plate mussels neatly on a platter, optionally over a bed of rock salt or sliced limes
    • Serve immediately while hot, with extra lime wedges or chili sauce on the side if desired
