Preheat the oven to 425°F.
Peel the orange in strips, leaving the flesh for juicing or snacking.
Transfer the zest of the Orange to a food processor and mix with salt. You need to process the zest and salt until they’re evenly mixed.
Mix the orange salt and breadcrumbs in a small bowl.
Brush a small amount of olive oil on the bottom side and top side of all 4 fillets.
Sprinkle the orange salt and breadcrumb mixture on the bottom and top side of all 4 fillets.
Place the fillets in a baking pan and bake at 375 degrees for approximately 10-15 minutes. (Don’t forget to flip the fillets over after 5 minutes).
When fish is finished, sprinkle it with minced parsley and serve while hot.
Serving Suggestions: Serve on a bed of your choice of leafy greens.
