    Ingredients

    • 1 large orange
    • ½ cup of salt
    • 4 Alaskan Pollock frozen fillets
    • 1 cup breadcrumbs
    • 2 tablespoons minced parsley
    • 4 tablespoons olive oil

    Method

    • Preheat the oven to 425°F.

    • Peel the orange in strips, leaving the flesh for juicing or snacking.

    • Transfer the zest of the Orange to a food processor and mix with salt. You need to process the zest and salt until they’re evenly mixed.

    • Mix the orange salt and breadcrumbs in a small bowl.

    • Brush a small amount of olive oil on the bottom side and top side of all 4 fillets.

    • Sprinkle the orange salt and breadcrumb mixture on the bottom and top side of all 4 fillets.

    • Place the fillets in a baking pan and bake at 375 degrees for approximately 10-15 minutes. (Don’t forget to flip the fillets over after 5 minutes).

    • When fish is finished, sprinkle it with minced parsley and serve while hot.

    • Serving Suggestions: Serve on a bed of your choice of leafy greens.
