    Ingredients

    • 24 clams, shucked
    • 4 slices bacon, diced
    • 2 cloves garlic, minced
    • 2 tablespoons parsley, chopped
    • 2 tablespoons butter
    • 2 tablespoons breadcrumbs
    • 2 tablespoons Parmesan cheese

    Method

    • Clams Casino: Step-by-Step Method
    • Preheat oven to 220°C (425°F)
    • Rinse and inspect 24 shucked clams, pat dry if needed
    • Dice 4 slices of bacon into small pieces
    • Mince 2 cloves of garlic finely
    • Chop 2 tablespoons of parsley
    • In a skillet over medium heat, cook diced bacon until just crisp, transfer to paper towel to drain
    • In same bacon fat, sauté garlic until fragrant (about 30 seconds)
    • Add 2 tablespoons of butter to skillet, melt gently and stir
    • Stir in cooked bacon, 2 tablespoons breadcrumbs, 2 tablespoons Parmesan cheese, and half the parsley, mix well then remove from heat
    • Arrange clam shells on a baking tray or oven-safe platter
    • Place a shucked clam in each half shell
    • Spoon a portion of the prepared breadcrumb mixture over each clam
    • Bake for 8-10 minutes until topping is golden and crisp
    • Remove from oven and sprinkle remaining parsley evenly over each clam
    • Serve immediately, hot, directly on a platter
    • For plating, line platter with rock salt or lemon slices to stabilize shells and add visual appeal
    • Garnish with extra lemon wedges for squeezing, if desired
    • Serve as an appetizer or with chilled white wine to complement flavors
