    Ingredients

    • 1 lb. cockles
    • 2 tablespoons vegetable oil
    • 2 cloves garlic, minced
    • 1 small onion, diced
    • 1 teaspoon minced ginger
    • 2 teaspoons curry powder
    • 1/2 teaspoon turmeric
    • 1 (14-ounce) can coconut milk
    • 1/2 cup chicken broth
    • 1/4 teaspoon salt
    • 1/4 teaspoon freshly ground black pepper
    • 1/4 cup chopped fresh cilantro leaves, for garnish

    Method

    • To begin, heat the oil in a large skillet over medium heat.

    • Add the garlic, ginger, and onion and sauté until fragrant, about 2 minutes.

    • Add the curry powder and turmeric and stir to combine.

    • Pour in the coconut milk and chicken broth and bring to a simmer.

    • Add the cockles and simmer until cooked through about 5 minutes.

    • Season with salt and pepper to taste.

    • Serve the curry over steamed rice and garnish with cilantro leaves.
