To begin, heat the oil in a large skillet over medium heat.
Add the garlic, ginger, and onion and sauté until fragrant, about 2 minutes.
Add the curry powder and turmeric and stir to combine.
Pour in the coconut milk and chicken broth and bring to a simmer.
Add the cockles and simmer until cooked through about 5 minutes.
Season with salt and pepper to taste.
Serve the curry over steamed rice and garnish with cilantro leaves.
