    • Rinse cockles thoroughly in cold water, discarding any that remain open.
    • Peel and finely slice garlic.
    • Chop parsley, reserving a small amount for garnish.
    • Measure out olive oil, white wine, lemon juice, and chilli flakes.
    • In a large pan, heat olive oil over medium heat.
    • Add sliced garlic to the pan; gently sauté until just fragrant, not browned.
    • Add chilli flakes to the pan; cook for 30 seconds to release aroma.
    • Pour in white wine; allow alcohol to evaporate for 1 minute.
    • Add cockles to the pan; stir to combine with aromatics.
    • Cover the pan with a lid; steam cockles for 3-4 minutes until opened.
    • Remove lid; discard any cockles that stayed closed.
    • Add lemon juice and most of the chopped parsley to the pan; toss gently to combine.
    • Season with salt and pepper to taste; mix gently.
    • Transfer cockles and cooking liquid to a wide serving bowl.
    • Garnish with reserved parsley and a light drizzle of olive oil.
    • Serve immediately with lemon wedges and crusty bread if desired.
