    Cod Provencal is a classic French dish that is simple to make but packed with flavour. This dish is made with cod fillets, olive oil, garlic, tomatoes, onions, white wine, parsley, thyme, oregano, bay leaf, capers, and olives. The combination of these ingredients creates a flavorful dish that is sure to please any palate. The dish is also a great way to get your daily dose of protein and healthy fats.

    Ingredients

    • Cod fillets
    • Olive oil
    • Salt and pepper
    • Garlic
    • Tomatoes, diced
    • Onion, diced
    • White wine
    • Parsley, chopped
    • Thyme
    • Oregano
    • Bay leaf
    • Capers
    • Olives, pitted and halved

    Method

    • Step-by-Step Method for Cod Provençal
    • Preheat the oven to 180°C (350°F)
    • Pat cod fillets dry with kitchen paper and season both sides with salt and pepper
    • Dice onion and set aside
    • Chop garlic and set aside
    • Dice tomatoes and set aside
    • Halve and pit olives if needed, set aside
    • Finely chop parsley, set aside for garnishing
    • In a small bowl, combine thyme, oregano, and bay leaf
    • In a large ovenproof skillet or casserole, heat olive oil over medium heat
    • Add diced onion and sauté until softened, about 3 minutes
    • Add chopped garlic, stirring until fragrant, about 1 minute
    • Add diced tomatoes and cook until slightly softened, about 3 minutes
    • Pour in white wine and simmer 2 minutes to reduce slightly
    • Stir in thyme, oregano, bay leaf, capers, and olives
    • Arrange seasoned cod fillets on top of the vegetable mixture
    • Spoon some tomato mixture over the cod to moisten the surface
    • Transfer pan to the oven and bake until the cod is opaque and flakes easily, 12–15 minutes
    • Remove bay leaf from pan after baking
    • Sprinkle with chopped parsley before serving
    • Plate the fish with generous spoonfuls of the Provençal vegetables and juices
    • Serve immediately with a lemon wedge if desired
