    Cod Provencal is a classic French dish that is simple to make but packed with flavour. This dish is made with cod fillets, olive oil, garlic, tomatoes, onions, white wine, parsley, thyme, oregano, bay leaf, capers, and olives. The combination of these ingredients creates a flavorful dish that is sure to please any palate. The dish is also a great way to get your daily dose of protein and healthy fats.

    Ingredients

    • Cod fillets
    • Olive oil
    • Salt and pepper
    • Garlic
    • Tomatoes, diced
    • Onion, diced
    • White wine
    • Parsley, chopped
    • Thyme
    • Oregano
    • Bay leaf
    • Capers
    • Olives, pitted and halved

    Method

    • To make Tuna Fish Cakes, start by draining the canned tuna. 
    • While the rice is cooking, prepare the eel by grilling or frying it.
    • Put the tomato paste, olives, and butter into a blender or food processor and whizz until smooth.
    • Put the oats in the blender or food processor, slightly broken up.
    • Coat the fillets with the butter mixture while grilling.
    • Heat a large skillet over medium-high heat and add the fish cakes.
    • Place the cod fillets in an oven-safe dish and pour the sauce over the top.
    • Dip in the flour and coat each fishcake. Dip in the egg and then coat with crumbs. Repeat this process until you have 24 fishcakes. Chill the fish cakes for one hour.
