    Ingredients

    • Cod fillets
    • Olive oil
    • Salt and pepper
    • Garlic
    • Tomatoes, diced
    • Onion, diced
    • White wine
    • Parsley, chopped
    • Thyme
    • Oregano
    • Bay leaf
    • Capers
    • Olives, pitted and halved

    Method

    • Preheat the oven to 350°F.
    • Pat the cod fillets dry with a paper towel and season with salt and pepper.
    • In a large skillet, heat the olive oil over medium heat.
    • Add the garlic, tomatoes, and onions and sauté for 3-4 minutes.
    • Add the white wine and herbs and simmer for 10 minutes.
    • Add the capers and olives and cook for an additional 5 minutes.
    • Place the cod fillets in an oven-safe dish and pour the sauce over the top.
    • Bake in the preheated oven for 15-20 minutes.
