    Ingredients

    • 1 lb. cod fillet
    • 1 tablespoon olive oil
    • 1 onion, diced
    • 2 cloves garlic, minced
    • 1 teaspoon fresh ginger, grated
    • 1 teaspoon ground cumin
    • 1 teaspoon ground coriander
    • 1 teaspoon ground turmeric
    • 1 teaspoon garam masala
    • 1/4 teaspoon cayenne pepper
    • 1 can (14.5 oz.) coconut milk
    • 1/2 cup vegetable broth
    • 2 tablespoons tomato paste
    • 1/4 cup fresh cilantro, chopped
    • Salt and pepper to taste

    Method

    • Method: Cod with Coconut Curry
    • Prepare all ingredients: dice onion, mince garlic, grate ginger, chop cilantro, cut cod into large chunks
    • Heat olive oil in a large skillet over medium heat
    • Sauté diced onion until softened and lightly golden (about 4 minutes)
    • Add garlic and grated ginger, cook until fragrant (1 minute)
    • In a small bowl, combine cumin, coriander, turmeric, garam masala, cayenne; set aside
    • Add the combined spices to the pan, stir and toast for 1 minute to release aromas
    • Stir in tomato paste, cook for 1 more minute
    • Pour in coconut milk and vegetable broth, mix until smooth
    • Bring the curry sauce to a gentle simmer
    • Season cod chunks with salt and pepper
    • Gently add cod pieces to the simmering curry sauce in a single layer
    • Cover and cook on low heat until cod just flakes with a fork (6-8 minutes)
    • Taste and adjust salt and pepper as desired
    • Remove skillet from heat, sprinkle with fresh cilantro
    • Serve immediately, spooning curry over rice or steamed vegetables if desired
    • Suggest plating in a shallow bowl, arranging cod pieces evenly
    • Garnish with extra cilantro and a wedge of lime if available
