    Ingredients

    • 1 lb. cod fillet
    • 1 tablespoon olive oil
    • 1 onion, diced
    • 2 cloves garlic, minced
    • 1 teaspoon fresh ginger, grated
    • 1 teaspoon ground cumin
    • 1 teaspoon ground coriander
    • 1 teaspoon ground turmeric
    • 1 teaspoon garam masala
    • 1/4 teaspoon cayenne pepper
    • 1 can (14.5 oz.) coconut milk
    • 1/2 cup vegetable broth
    • 2 tablespoons tomato paste
    • 1/4 cup fresh cilantro, chopped
    • Salt and pepper to taste

    Method

    • Begin by preheating the oven to 375 degrees.
    • Place the cod fillets in an oven-safe dish and season with salt and pepper.
    • Heat the olive oil in a large skillet over medium heat.
    • Add the onion and garlic and cook until the onion is softened and lightly browned, about 5 minutes.
    • Add the ginger, cumin, coriander, turmeric, garam masala, and cayenne pepper and cook for 1 minute, stirring constantly.
    • Pour the coconut milk, vegetable broth, and tomato paste and bring to a simmer. Simmer for 5 minutes, stirring occasionally.
    • Pour the sauce over the cod fillets and bake in the oven for 15 minutes.
    • Sprinkle with fresh cilantro and serve.
