    Ingredients

    • 1 large mango, peeled and diced
    • 1 large coley fillet, cooked and flaked
    • 1 small red onion, finely diced
    • 2 tablespoons freshly chopped coriander
    • 2 tablespoons freshly chopped mint
    • 2 tablespoons freshly squeezed lime juice
    • 1 tablespoon olive oil
    • Salt and freshly ground black pepper, to taste

    Method

    • Step-by-step Method for Coley and Mango Salad
    • Peel and dice the mango into small, even cubes
    • Finely dice the red onion
    • Chop the fresh coriander leaves
    • Chop the fresh mint leaves
    • Squeeze limes and measure out two tablespoons of juice
    • Flake the cooked coley fillet into bite-sized pieces, removing any bones or skin
    • Place the diced mango, diced red onion, chopped coriander, and chopped mint in a large mixing bowl
    • Add the flaked coley fillet to the bowl
    • Drizzle the olive oil and freshly squeezed lime juice over all ingredients
    • Season with salt and freshly ground black pepper to taste
    • Gently toss all ingredients together until well combined, taking care not to break up the fish too much
    • Taste and adjust lime, salt, or pepper as desired
    • Transfer the salad to a serving platter or individual bowls
    • Garnish with additional coriander or mint if desired
    • Serve immediately, ideally slightly chilled
