    Ingredients

    • 4 cod fillets
    • 1 cup cornflakes
    • 1/2 cup all-purpose flour
    • 2 cloves garlic, finely chopped
    • Bunch of dills, chopped
    • 2 lemons, cut into wedges
    • 1 cup mayonnaise
    • Salt and ground black pepper to taste
    • Oil for frying

    Method

    • Mix the cornflakes with the flour.
    • Put the fish on a plate and season with salt, pepper, lemon, garlic and chopped dill.
    • Roll the fish fillet in the cornflake and flour mixture, rolling from both sides.
    • Heat 2-3 inches of oil in a deep-fryer. The oil must be heated to 365 degrees given that when the oil rises to a temp of 350, the fish begins to stick to the pan and the fillets become too soggy when cooked.
    • Once the oil has reached the required temp, fry the fish until they turn a golden brown. This should take about 3 to 4 minutes.
    • Take the fish fillets out of the oil and place them on a paper towel.
    • For the Garlic Mayo: Saute the chopped garlic until it gets golden brown. Combine all of the ingredients for the garlic mayo in a mixing bowl; sauteed garlic, lemon juice and mayonnaise.
    • Mix all the ingredients until they have formed a mixture that is firm and smooth.
    • Serving Suggestion: Serve fish with garlic mayo, lemon wedges, and rice.
