    Ingredients

    • 2 tablespoons vegetable oil
    • 2 cloves garlic, minced
    • 1 tablespoon fresh ginger, minced
    • 1/2 onion, diced
    • 1 carrot, diced
    • 1/2 bell pepper, diced
    • 2 cups cooked white rice
    • 1/2 pound cooked crab meat
    • 2 tablespoons soy sauce
    • 2 tablespoons oyster sauce
    • 1/2 teaspoon sesame oil
    • 1/4 teaspoon white pepper
    • 2 green onions, sliced
    • 1 egg, lightly beaten
    • 2 tablespoons chopped cilantro

    Method

    • Step-by-Step Method: Crab Fried Rice
    • Dice onion, carrot, and bell pepper into small, uniform pieces
    • Mince garlic and ginger finely
    • Lightly beat the egg in a bowl and set aside
    • Slice green onions and chop cilantro
    • Gently break cooked crab meat into bite-sized pieces, removing any shell
    • Prepare all sauces and measure out oil, soy sauce, oyster sauce, sesame oil, and white pepper
    • Preheat a large wok or skillet over medium-high heat
    • Add 1 tablespoon vegetable oil to the hot pan
    • Add minced garlic and ginger, stir-fry until fragrant (about 30 seconds)
    • Add diced onion, carrot, and bell pepper, stir-fry until slightly softened (about 2 minutes)
    • Push vegetables to one side of the pan
    • Add remaining 1 tablespoon oil to the cleared side
    • Pour in the beaten egg, scramble gently until softly set
    • Add cooked white rice, breaking up any clumps, and stir-fry to combine with egg and vegetables
    • Add cooked crab meat, carefully folding it in to warm through
    • Drizzle soy sauce, oyster sauce, sesame oil, and sprinkle white pepper evenly over the mixture
    • Toss and stir-fry everything together, ensuring even sauce distribution
    • Taste and adjust seasoning if needed
    • Remove from heat and top with sliced green onions and chopped cilantro
    • Plate the fried rice in a neat mound, garnish with extra cilantro and green onion
    • Serve immediately, optional accompaniment: lime wedge or light cucumber salad
