    Ingredients

    • 4 Dover Sole fillets
    • 1 cup Panko breadcrumbs
    • 2 tablespoons grated Parmesan cheese
    • 1 teaspoon dried oregano
    • 1 teaspoon garlic powder
    • 1/2 teaspoon paprika
    • 1/4 teaspoon salt
    • 1/4 teaspoon black pepper
    • 2 tablespoons olive oil
    • 2 tablespoons butter, melted

    Method

    • Dover Sole with Panko Crust: Step-by-Step Method
    • Preheat oven to 200°C (390°F) and line a baking sheet with parchment paper
    • Pat Dover sole fillets dry with paper towel to remove excess moisture
    • Combine panko breadcrumbs, grated Parmesan cheese, dried oregano, garlic powder, paprika, salt, and black pepper in a shallow dish
    • Mix olive oil and melted butter in a small bowl
    • Brush each Dover sole fillet on both sides with the olive oil and butter mixture
    • Press each fillet into the breadcrumb mixture, coating all sides evenly and gently pressing crumbs to adhere
    • Place coated fillets onto the prepared baking sheet in a single layer
    • Drizzle any remaining olive oil and butter mixture lightly over the top of the coated fillets
    • Bake in the preheated oven for 10–12 minutes, or until the crust is golden and the fish flakes easily with a fork
    • Transfer fillets to plates using a fish spatula to keep the crust intact
    • Serve immediately, garnished with a lemon wedge if desired
    • Suggested plating: place fillet at the center of the plate, scatter microgreens or fresh herbs around, optional drizzle of extra olive oil
    • Serve alongside sautéed seasonal vegetables or a crisp green salad for balance
