    Ingredients

    • 2 Dover Sole fillets
    • 2 tablespoons olive oil
    • Salt and pepper
    • 1/4 cup fresh basil leaves
    • 2 cloves garlic, peeled and chopped
    • 2 tablespoons pine nuts
    • 2 tablespoons freshly grated Parmesan cheese
    • 2 tablespoons extra-virgin olive oil
    • 2 tablespoons freshly squeezed lemon juice
    • 1/4 teaspoon sea salt
    • Freshly ground black pepper, to taste

    Method

    • Preheat the oven to 350°F (175°C).
    • In a food processor, combine the basil, garlic, pine nuts, Parmesan cheese, extra-virgin olive oil, lemon juice, and sea salt. Blend until smooth.
    • Place the Dover Sole fillets on a baking sheet and brush with olive oil. Season with salt and pepper.
    • Spread the pesto over the top of the fillets.
    • Bake in the preheated oven for 15-20 minutes, or until the fish is cooked through.
