    Ingredients

    • 2 Dover Sole fillets
    • 2 tablespoons olive oil
    • Salt and pepper
    • 1/4 cup fresh basil leaves
    • 2 cloves garlic, peeled and chopped
    • 2 tablespoons pine nuts
    • 2 tablespoons freshly grated Parmesan cheese
    • 2 tablespoons extra-virgin olive oil
    • 2 tablespoons freshly squeezed lemon juice
    • 1/4 teaspoon sea salt
    • Freshly ground black pepper, to taste

    Method

    • Step-by-Step Method: Dover Sole with Pesto
    • Rinse Dover Sole fillets under cold water and pat dry with paper towels
    • Season both sides of the fillets with salt and freshly ground black pepper
    • Preheat oven to 180°C (350°F) or prepare a nonstick skillet on medium heat
    • Place fresh basil leaves, chopped garlic, pine nuts, Parmesan cheese, 2 tablespoons extra-virgin olive oil, lemon juice, and 1/4 teaspoon sea salt into a food processor
    • Blend pesto ingredients until smooth, scraping down sides as needed
    • Taste pesto, adjust salt and pepper to desired seasoning
    • Arrange Dover Sole fillets on a baking tray lined with parchment or in the skillet
    • Drizzle 2 tablespoons olive oil over the fillets
    • If baking: Bake fillets for 8–10 minutes or until just opaque and gently flaky
    • If pan-cooking: Sear fillets for 2–3 minutes per side until lightly golden and fish just flakes
    • Transfer cooked fillets to serving plates
    • Spoon fresh pesto generously over each fillet
    • Garnish with a small sprig of basil or a light sprinkle of lemon zest if desired
    • Serve immediately, with seasonal salad or steamed vegetables as an optional complement
