    Ingredients

    • 2 cups cooked white rice
    • 2 tablespoons olive oil
    • 1 pound fish fillets, such as tilapia or cod
    • Salt and pepper
    • 2 cloves garlic, minced
    • 2 tablespoons fresh lemon juice
    • 2 tablespoons chopped fresh parsley

    Method

    • Step-by-step Method for Fish and Rice
    • Pat fish fillets dry with paper towel and season both sides with salt and pepper
    • Place a nonstick pan over medium-high heat and add 1 tablespoon olive oil
    • When oil is shimmering, add fish fillets to the pan
    • Sear fish fillets for 2-3 minutes per side, until golden and cooked through; transfer to a plate
    • In a separate pan, add 1 tablespoon olive oil over medium heat
    • Add minced garlic to the oil and sauté for 30 seconds until fragrant
    • Add cooked white rice to the pan with garlic and stir to combine and heat through
    • Drizzle rice with fresh lemon juice, season with salt and pepper to taste, and stir in chopped fresh parsley
    • Flake seared fish into large chunks
    • Spoon the warm, flavored rice onto serving plates
    • Top rice with chunks of seared fish
    • Garnish with additional fresh parsley and a final drizzle of lemon juice
    • Serve immediately while hot
