    Ingredients

    • 2 cups cooked white rice
    • 2 tablespoons olive oil
    • 1 pound fish fillets, such as tilapia or cod
    • Salt and pepper
    • 2 cloves garlic, minced
    • 2 tablespoons fresh lemon juice
    • 2 tablespoons chopped fresh parsley

    Method

    • Begin by cooking the rice according to the package instructions.
    • Heat the olive oil in a large skillet over medium-high heat.
    • Season the fish fillets with salt and pepper.
    • Place the fish in the skillet and cook for 3-4 minutes per side until cooked.
    • Remove the fish from the skillet and set aside.
    • Add the garlic to the skillet and cook for 1 minute.
    • Add the cooked rice to the skillet and stir to combine.
    • Add the lemon juice and parsley and stir to combine.
    • Place the fish back in the skillet and cook for an additional 2 minutes.
    • Serve the Fish and Rice with your favourite sides.
