Ingredients
1 pound of white fish fillets (such as cod, haddock, or tilapia)
1 large onion, chopped
2 cloves garlic, minced
1 red bell pepper, chopped
2 stalks celery, chopped
2 carrots, diced
1 (14.5 ounce) can diced tomatoes
1 cup white wine
2 tablespoons olive oil
2 teaspoons dried oregano
1 teaspoon dried thyme
1 teaspoon paprika
1 bay leaf
2 cups fish stock
Salt and pepper, to taste
1/4 cup parsley, chopped
Method
To make Tuna Fish Cakes, start by draining the canned tuna.
While the rice is cooking, prepare the eel by grilling or frying it.
Put the tomato paste, olives, and butter into a blender or food processor and whizz until smooth.
Put the oats in the blender or food processor, slightly broken up.
