    Ingredients

    • 1 pound of white fish fillets (such as cod, haddock, or tilapia)
    • 1 large onion, chopped
    • 2 cloves garlic, minced
    • 1 red bell pepper, chopped
    • 2 stalks celery, chopped
    • 2 carrots, diced
    • 1 (14.5 ounce) can diced tomatoes
    • 1 cup white wine
    • 2 tablespoons olive oil
    • 2 teaspoons dried oregano
    • 1 teaspoon dried thyme
    • 1 teaspoon paprika
    • 1 bay leaf
    • 2 cups fish stock
    • Salt and pepper, to taste
    • 1/4 cup parsley, chopped

    Method

    • To make Fish Stew, begin by heating the olive oil in a large pot over medium-high heat.
    • Once the oil is hot, add the onion, garlic, bell pepper, celery, and carrots. Cook for 5-7 minutes, stirring occasionally until the vegetables are softened.
    • Next, add the diced tomatoes, white wine, oregano, thyme, paprika, and bay leaf. Stir to combine and let the mixture simmer for 5 minutes.
    • Add the fish stock and bring the mixture to a boil.
    • Once boiling, reduce the heat to low and add the fish fillets. Cover the pot and let the stew simmer for 10-15 minutes or until the fish is cooked through.
    • Finally, season the stew with salt and pepper to taste and stir in the chopped parsley.
