Ingredients
1 pound of white fish fillets (such as cod, haddock, or tilapia)
1 large onion, chopped
2 cloves garlic, minced
1 red bell pepper, chopped
2 stalks celery, chopped
2 carrots, diced
1 (14.5 ounce) can diced tomatoes
1 cup white wine
2 tablespoons olive oil
2 teaspoons dried oregano
1 teaspoon dried thyme
1 teaspoon paprika
1 bay leaf
2 cups fish stock
Salt and pepper, to taste
1/4 cup parsley, chopped
Method
To make Fish Stew, begin by heating the olive oil in a large pot over medium-high heat.
Once the oil is hot, add the onion, garlic, bell pepper, celery, and carrots. Cook for 5-7 minutes, stirring occasionally until the vegetables are softened.
