    • 1/4 teaspoon cayenne pepper
    • 1/2 cup vegetable oil
    • 1/2 cup mayonnaise
    • 2 tablespoons sweet pickle relish
    • 1 tablespoon minced onion
    • 1 tablespoon fresh lemon juice
    • 1/4 teaspoon Worcestershire sauce
    • 1/4 teaspoon dried dill weed
    • Salt and pepper to taste

    Method

    • Fried Cod with Tartar Sauce: Step-by-Step Method
    • Pat cod fillets dry thoroughly using paper towels
    • Cut cod fillets into uniform pieces if necessary for even cooking
    • In a shallow dish, combine all-purpose flour, salt, black pepper, garlic powder, paprika, and cayenne pepper; mix well
    • Coat each cod fillet evenly in the seasoned flour mixture, shaking off excess
    • Pour vegetable oil into a skillet to a depth of about 1 cm and heat over medium-high until shimmering but not smoking
    • When the oil is ready, gently add cod fillets, being careful to avoid crowding the pan
    • Fry cod fillets for 3–4 minutes per side, or until each piece is golden brown and cooked through (internal temperature 60°C/140°F)
    • Remove fried cod from skillet and drain on a wire rack or paper towels
    • While fish is cooling, stir together mayonnaise, sweet pickle relish, minced onion, lemon juice, Worcestershire sauce, dried dill weed, salt, and pepper to taste in a small bowl to create tartar sauce
    • Taste tartar sauce and adjust seasoning if needed
