    • 4 swordfish steaks
    • 2 1⁄2 cm ginger root, peeled and finely chopped
    • 2 garlic cloves, crushed
    • 1 lemon, juiced
    • 2 spring onions, chopped
    • 1 red chilli, deseeded and finely chopped
    • 2 tablespoons olive oil

    Method

    • Pat swordfish steaks dry with kitchen paper to ensure a good sear and prevent excess moisture.
    • Place ginger root and garlic in a small bowl and combine thoroughly.
    • Add lemon juice, olive oil, chopped red chilli, and spring onions to the bowl and stir well to create a marinade.
    • Lay the swordfish steaks in a single layer in a shallow dish.
    • Pour the marinade evenly over each swordfish steak, ensuring both sides are coated.
    • Cover dish and refrigerate for a minimum of 30 minutes to allow flavors to infuse.
    • Preheat a grill pan or heavy skillet over medium-high heat.
    • Remove swordfish steaks from marinade, allowing excess marinade to drip off, but reserve the marinade for basting.
    • Place swordfish steaks on the hot grill pan or skillet.
    • Cook each steak for approximately 3–4 minutes per side, basting occasionally with reserved marinade, until just opaque in the center and lightly charred.
    • Remove cooked swordfish steaks from heat and let rest for 2 minutes.
    • Plate each steak individually; optionally drizzle any remaining marinade (that has been briefly boiled) over the top.
    • Garnish each plate with additional chopped spring onion and a lemon wedge for brightness.
    • Serve immediately, pairing with steamed green vegetables, grilled asparagus, or a lightly dressed salad for balance.
