A scrumptious Swordfish Recipe! The flavour of the lemon dominates but does not overwhelm ginger or garlic.

  • 4 swordfish steaks
  • 2 1⁄2 cm ginger root, peeled and finely chopped
  • 2 garlic cloves, crushed
  • 1 lemon, juiced
  • 2 spring onions, chopped
  • 1 red chilli, deseeded and finely chopped
  • 2 tablespoons olive oil


  • Place the swordfish steaks in a single layer in a dish.

  • In a bowl, mix the ginger, garlic, lemon juice, spring onion, chilli and olive oil.

  • Spoon the marinade over the fish and then leave to marinate for up to 15 minutes.

  • Meanwhile, preheat the grill on high.

  • Remove the fish from the marinade and then place it on the grill. The tuna may be basted with soy sauce and a little sesame oil if desired.

  • Cook for 3-5 minutes on each side until the fish is cooked through.

  • Serving Suggestions: Serve with rice and steamed vegetables.
