    Ingredients

    • 4 catfish fillets
    • 2 tablespoons olive oil
    • 2 tablespoons freshly squeezed lemon juice
    • 2 tablespoons freshly chopped parsley
    • 1 teaspoon garlic powder
    • 1 teaspoon paprika
    • 1 teaspoon dried oregano
    • 1/2 teaspoon salt
    • 1/4 teaspoon freshly ground black pepper
    • Lemon wedges, for serving (optional)

    Method

    • Mix the olive oil, lemon juice, parsley, garlic powder, paprika, oregano, salt, and pepper in a shallow dish.
    • Place the catfish fillets in the marinade and turn to coat. Cover and refrigerate for at least 15 minutes.
    • Preheat the grill to medium-high heat.
    • Remove the catfish from the marinade and discard the marinade.
    • Place the catfish on the preheated grill and cook for 5-7 minutes per side until the fish is cooked and flakes easily with a fork.
    • Serve with lemon wedges, if desired.
