    Cod is a mild, firm-bodied fish, which makes it perfect for cooking on the grill. You can cook the fish on the grill grates without a problem. Just use your spatula to gently prod it around. This recipe is easy to make and makes the fish tastes even better especially as it is grilled over hot coals.

    Ingredients

    • Oil spray
    • 4 Cod fillets, 200-250 g each
    • 1 tablespoon Cajun spice mix
    • 1/2 teaspoon lemon pepper
    • 1/4 teaspoon salt
    • 1/4 teaspoon ground black pepper
    • 2 tablespoons butter
    • 1 lemon
    • 2 tablespoons chopped spring onion, the white part only

    Method

    • Preheat your grill or grill pan to medium-high heat.
    • Lightly spray both sides of each cod fillet with oil spray.
    • Place each fillet on a plate or tray.
    • In a small bowl, mix together the Cajun spice mix, lemon pepper, salt, and ground black pepper.
    • Sprinkle the spice mixture evenly over both sides of each fillet, pressing gently to adhere.
    • Zest the lemon and set zest aside for garnish.
    • Cut the lemon into wedges for serving.
    • Chop the spring onion whites finely and set aside.
    • Slice the butter into 4 small pieces, one for each fillet.
    • Place the prepared fillets onto the grill, presentation side down.
    • Grill for 3–4 minutes without moving, until distinct grill marks form and fish releases easily from the grill.
    • Carefully flip each fillet with a fish spatula or wide tongs.
    • Top each fillet with a slice of butter.
    • Continue grilling for 2–3 more minutes, until fish is opaque and flakes easily with a fork.
    • Remove fillets from the grill and let rest for 2 minutes to allow juices to redistribute.
    • Plate each fillet on a warm plate.
    • Sprinkle with reserved lemon zest and chopped spring onion.
    • Serve immediately with lemon wedges on the side.
