Preheat a grill or skillet to medium-high heat.
Season the cod fillets with salt and pepper.
Place the cod fillets on the grill or skillet and cook for 3-4 minutes on each side or until the cod is cooked through and flakes easily with a fork.
In a small saucepan, melt the butter over medium heat.
Add the minced garlic and cook for 1 minute, stirring occasionally.
Remove the pan from the heat and stir in the chopped parsley.
Brush the garlic butter sauce over the cod fillets.
Drizzle the cod with olive oil and season with additional salt and pepper, if desired.
Serve the grilled cod with garlic butter, lemon wedges, and your favourite side dishes.
