    • 2 tablespoons melted butter
    • 2 tablespoons honey
    • 1/2 lemon juice
    • 2 teaspoons soy sauce
    • 1/2 teaspoon pepper
    • 2 cloves garlic, minced
    • 4 inch-thick halibut steaks

    Method

    • Step-by-Step Method: Grilled Halibut
    • Preheat the grill to medium-high heat (about 200–220°C / 400–430°F)
    • Pat the halibut steaks dry with a paper towel to ensure a good sear
    • In a small bowl, combine melted butter, honey, lemon juice, soy sauce, minced garlic, and pepper to form the marinade
    • Brush both sides of each halibut steak with the prepared marinade
    • Reserve a small amount of marinade for later basting during grilling
    • Let halibut rest at room temperature for 10–15 minutes to enhance flavor absorption
    • Oil the grill grates or brush halibut steaks with a thin layer of butter to prevent sticking
    • Place halibut steaks on the preheated grill
    • Grill for 3–4 minutes on the first side, without moving, to achieve grill marks and prevent sticking
    • Carefully flip halibut steaks using a wide spatula
    • Baste the grilled side with reserved marinade for extra flavor
    • Grill for an additional 3–4 minutes or until fish is opaque and flakes easily with a fork (internal temp: ~55°C / 130°F)
    • Remove halibut from the grill and let rest for 2 minutes for juices to redistribute
    • Plate by drizzling a little extra marinade or lemon juice over the top
    • Serve immediately, optionally garnishing with fresh herbs or a lemon wedge if desired
