    • 2 John Dory fillets
    • 2 tablespoons of olive oil
    • Juice of 1 lime
    • 1 tablespoon of finely chopped coriander
    • Salt and pepper to taste

    Method

    • How to Make Grilled John Dory with Lime and Coriander
    • Pat both John Dory fillets dry with paper towels to remove any excess moisture
    • Season both sides of the fillets with salt and pepper to taste
    • Drizzle 1 tablespoon of olive oil over each fillet, spreading evenly with a brush or the back of a spoon
    • Squeeze the juice of half a lime over each fillet, ensuring even coverage
    • Sprinkle half of the finely chopped coriander over the fillets
    • Preheat a grill or grill pan to medium-high heat
    • Once hot, lightly oil the grill grates if needed to prevent sticking
    • Place the fillets skin-side down on the grill
    • Grill for about 3-4 minutes on the first side, until the fillets begin to turn opaque at the edges
    • Gently flip the fillets and cook for another 2-3 minutes, or until just cooked through and easily flaked with a fork
    • Remove the fillets from the grill and transfer to serving plates
    • Drizzle any remaining lime juice from the pan over the fillets
    • Garnish with the remaining chopped coriander
