    • 1 tablespoon olive oil
    • 1/2 teaspoon salt
    • 1/2 teaspoon black pepper
    • 1 large ripe mango, diced
    • 1 large ripe avocado, diced
    • 1/2 red onion, diced
    • 1/4 cup fresh cilantro, chopped
    • 1 jalapeno, seeded and diced
    • 2 tablespoons lime juice
    • 1/2 teaspoon salt

    Method

    • Step-by-Step Method: Grilled Mullet with Avocado-Mango Salsa
    • Pat mullet fillets dry with kitchen paper to ensure crisp skin
    • Brush fillets on both sides with olive oil
    • Season fillets with 1/2 teaspoon salt and 1/2 teaspoon black pepper
    • Prepare grill to medium-high heat; oil grates to prevent sticking
    • Dice mango, avocado, and red onion into small, even cubes
    • Chop fresh cilantro finely
    • Deseed and finely dice jalapeño
    • In a mixing bowl, combine mango, avocado, red onion, cilantro, and jalapeño
    • Add 2 tablespoons lime juice and 1/2 teaspoon salt to bowl and toss gently to mix
    • Let salsa sit at room temperature to allow flavors to meld
    • Place mullet fillets skin-side down on hot grill grates
    • Grill fillets without moving for 3–4 minutes until skin crisps and flesh turns opaque halfway up
    • Flip fillets gently and cook flesh side for 1–2 more minutes until just cooked through
    • Transfer grilled fillets to serving plates
    • Spoon generous portion of avocado-mango salsa over or beside each fillet
    • Garnish with extra cilantro if desired
    • Serve immediately, optionally with lime wedges for squeezing
