    Ingredients

    • 1 lb. squid, cleaned and cut into rings
    • 2 tablespoons olive oil
    • 1/2 teaspoon sea salt
    • 1/4 teaspoon freshly ground black pepper
    • 1/4 cup freshly squeezed lemon juice
    • 2 cloves garlic, minced
    • 1/4 cup chopped fresh parsley
    • 1/4 cup chopped fresh mint
    • 1/4 cup chopped fresh basil
    • 1/4 cup chopped red onion
    • 1/4 cup chopped green onion
    • 1/4 cup crumbled feta cheese
    • 1/2 cup cherry tomatoes, halved
    • 1/4 cup pitted kalamata olives, halved
    • 1/4 cup extra-virgin olive oil
    • 1/4 cup balsamic vinegar
    • 1/4 teaspoon sea salt
    • 1/4 teaspoon freshly ground black pepper

    Method

    • To prepare Grilled Squid Salad, begin by cleaning and cutting the squid into rings.
    • Heat 2 tablespoons of olive oil in a large skillet over medium-high heat.
    • Add the squid rings and season with 1/2 teaspoon of sea salt and 1/4 teaspoon of freshly ground black pepper. Cook the squid until it is lightly charred and cooked through, about 3-4 minutes.
    • In a large bowl, whisk together the lemon juice, garlic, parsley, mint, basil, red onion, green onion, feta cheese, cherry tomatoes, and kalamata olives. Drizzle with extra-virgin olive oil and balsamic vinegar and season with 1/4 teaspoon of sea salt and 1/4 teaspoon of freshly ground black pepper.
    • Add the cooked squid to the bowl and gently toss to combine. Serve the Grilled Squid Salad immediately.
