Season the halibut fillets with salt and pepper to prepare Halibut with Cilantro-Lime Sauce.
Heat the olive oil in a large skillet over medium-high heat.
Once the oil is hot, add the fillets and cook for 4-5 minutes per side, or until cooked through.
While the fish is cooking, mix the cilantro-lime sauce ingredients in a bowl.
Once the halibut is cooked, pour the sauce over the top and let the flavours meld together.
