    Ingredients

    • 4 (6-ounce) halibut fillets
    • Salt and freshly ground black pepper
    • 2 tablespoons olive oil
    • 1/4 cup chopped shallots
    • 2 cloves garlic, minced
    • 1/2 teaspoon ground cumin
    • 1/4 teaspoon red pepper flakes
    • 1/4 cup white wine
    • 1/2 cup chicken broth
    • 2 tablespoons freshly squeezed lime juice
    • 1/4 cup chopped fresh cilantro
    • 1 tablespoon butter

    Method

    • Begin by seasoning the halibut fillets with salt and pepper. 
    • Heat the olive oil in a large skillet over medium heat. 
    • Add the shallots and garlic, and sauté for 2-3 minutes. 
    • Add the cumin and red pepper flakes, and cook for an additional minute. 
    • Pour in the white wine and chicken broth, and bring the mixture to a boil. Reduce the heat to low and simmer for 5 minutes.
    • Add the lime juice and cilantro, and stir to combine. 
    • Place the halibut fillets in the skillet and cook for 8-10 minutes, flipping once halfway through. 
    • Once the halibut is cooked through, remove from the heat and stir in the butter.
