    Ingredients

    • 4 halibut fillets
    • 2 tablespoons olive oil
    • 1 teaspoon garlic powder
    • 1 teaspoon dried oregano
    • 1 teaspoon dried basil
    • 1 teaspoon dried thyme
    • 1/2 teaspoon black pepper
    • 1/4 teaspoon sea salt
    • 4 cloves garlic, chopped
    • 2 tablespoons butter
    • 2 tablespoons fresh parsley, chopped
    • 2 tablespoons fresh lemon juice
    • 1/4 cup white wine
    • 1/4 cup chicken broth
    • 2 tablespoons capers

    Method

    • Halibut with Roasted Garlic and Herb Sauce – Step-by-Step Method
    • Preheat oven to 200°C (400°F)
    • Place whole garlic cloves (unpeeled) on a small piece of foil, drizzle with 1 teaspoon olive oil, wrap tightly
    • Roast garlic packet in the oven for 20-25 minutes until very soft
    • Meanwhile, pat halibut fillets dry with paper towels
    • Combine garlic powder, dried oregano, dried basil, dried thyme, black pepper, and sea salt in a small bowl
    • Evenly sprinkle the seasoning blend over both sides of each halibut fillet
    • Heat 1 tablespoon olive oil in a large, oven-safe skillet over medium-high heat
    • Sear halibut fillets in the hot oil, 2-3 minutes per side, until golden (do in batches if necessary)
    • Transfer seared fillets to a plate and wipe out excess oil from the skillet
    • Peel roasted garlic cloves and mash to a smooth paste
    • Place skillet back over medium heat, add chopped raw garlic and roasted garlic paste, sauté 30 seconds
    • Add butter, stirring until melted and fragrant
    • Pour in white wine, scraping up any browned bits, let simmer 1 minute to reduce slightly
    • Add chicken broth and capers, simmer 2-3 minutes to integrate flavors
    • Stir in lemon juice and half the chopped parsley
    • Return seared halibut fillets to pan, spoon sauce over, transfer skillet to oven
    • Roast 4-6 minutes, until halibut is opaque and just cooked through (internal temperature 52-54°C/125-130°F)
    • Remove from oven, spoon extra sauce over fillets
    • Plate each fillet with generous spoonful of the herb and garlic sauce
    • Garnish with remaining fresh parsley and additional capers if desired
    • Serve immediately, pairing suggestions: simply steamed greens and a lemon wedge
