    • 4 halibut fillets
    • 2 tablespoons olive oil
    • 1/4 cup white wine
    • 2 tablespoons capers
    • 1/4 teaspoon dried oregano
    • 1/4 teaspoon dried thyme
    • 1/4 teaspoon garlic powder
    • Salt and pepper to taste
    • 1 lemon, cut into wedges

    Method

    • Step-by-Step Method for Halibut with White Wine and Capers
    • Preheat the oven to 200°C (400°F)
    • Pat halibut fillets dry with paper towels; season both sides with salt and pepper
    • In a small bowl, mix together dried oregano, dried thyme, and garlic powder
    • Evenly sprinkle the spice mixture over both sides of the halibut fillets
    • Heat 2 tablespoons olive oil in a large ovenproof skillet over medium-high heat
    • Once oil is shimmering, add the halibut fillets to the pan, presentation side down
    • Sear for 2–3 minutes until golden brown; do not move the fillets during searing
    • Carefully flip fillets and pour 1/4 cup white wine around the fish
    • Scatter 2 tablespoons capers across the pan
    • Transfer the skillet to the preheated oven
    • Roast for 5–8 minutes, until the halibut just flakes with gentle pressure
    • Remove skillet from oven and let fish rest for 2 minutes in the pan juices
    • While the fish rests, slice lemon into wedges for serving
    • Use a wide spatula to transfer each fillet onto warm plates
    • Spoon pan juices, wine, and capers over each fillet
    • Garnish each plate with fresh lemon wedges
    • Serve immediately; recommend pairing with steamed greens or light salad if desired
