    Ingredients

    • 2 herring fillets
    • 1 Granny Smith apple
    • 2 tablespoons olive oil
    • 2 tablespoons white wine vinegar
    • 1 tablespoon honey
    • 1 tablespoon Dijon mustard
    • 1 teaspoon chopped fresh dill
    • Salt and black pepper, to taste
    • 2 tablespoons chopped fresh parsley
    • 2 tablespoons chopped fresh chives

    Method

    • To make Herring and Apple Salad, combine the herring, apple, olive oil, white wine vinegar, honey, Dijon mustard, dill, salt and pepper in a large bowl. Mix the ingredients until they are evenly combined.
    • Then, add the fresh parsley and chives and mix them in. 
    • Serve the salad as is, or chill it for a few hours before serving.
