    Ingredients

    • 2 herring fillets
    • 1 Granny Smith apple

    • 1 tablespoon Dijon mustard
    • 1 teaspoon chopped fresh dill
    • Salt and black pepper, to taste
    • 2 tablespoons chopped fresh parsley
    • 2 tablespoons chopped fresh chives

    • Core and dice Granny Smith apple into small cubes, leaving the skin on for texture

    • Stir chopped fresh dill, parsley, and chives into the dressing, reserving a pinch of each for garnish
    • Season dressing with salt and black pepper to taste
    • Combine herring pieces and diced apple in a large mixing bowl
    • Pour the dressing over the herring and apples, tossing gently to coat all pieces evenly
    • Taste and adjust seasoning, adding more salt or black pepper as needed
