    Ingredients

    • 1/2 lb herring fillets
    • 1/2 cup celery, finely chopped
    • 1/4 cup onion, finely chopped
    • 1/4 cup pickle relish
    • 2 tablespoons mayonnaise
    • 2 tablespoons white vinegar
    • 1/2 teaspoon sugar
    • Salt and pepper, to taste

    Method

    • Inspect the herring fillets for bones and remove any with fish tweezers
    • Cut herring fillets into bite-sized pieces and set aside
    • Rinse celery thoroughly and finely chop to yield 1/2 cup
    • Finely chop onion to make 1/4 cup and set aside
    • In a small bowl, combine pickle relish, mayonnaise, white vinegar, sugar, salt, and pepper to taste
    • Whisk the dressing mixture until smooth and fully emulsified
    • In a separate large bowl, place the chopped herring, celery, and onion
    • Pour the dressing over the fish and vegetable mixture
    • Stir gently to coat all ingredients evenly, keeping fish pieces whole
    • Taste and adjust salt and pepper as desired
    • Cover and refrigerate salad for at least 30 minutes to develop flavor
    • Toss salad gently before serving to redistribute dressing
    • Serve chilled on a cold plate or atop a bed of crisp lettuce for freshness
