    Ingredients

    • 2 herrings, filleted
    • 1 large red onion, thinly sliced
    • 2 tablespoons extra-virgin olive oil
    • 2 tablespoons white wine vinegar
    • 1 teaspoon sugar
    • 1 teaspoon sea salt
    • 1/2 teaspoon freshly ground black pepper
    • 2 tablespoons chopped fresh parsley
    • 2 tablespoons chopped fresh chives
    • 2 tablespoons chopped fresh dill

    Method

    • Check herrings for remaining pin bones and remove if necessary
    • Rinse the herring fillets gently under cold water and pat dry with paper towels
    • Slice the herring fillets into bite-sized pieces and set aside
    • Peel the red onion and slice it thinly into rings or half-moons
    • Place sliced red onion in a bowl, sprinkle with a pinch of the salt, and toss to separate layers
    • In a separate small bowl, whisk together olive oil, white wine vinegar, sugar, sea salt, and black pepper until the sugar dissolves
    • Add the sliced herring pieces to a large mixing bowl
    • Add the sliced onions to the herring pieces in the mixing bowl
    • Pour the dressing evenly over the herring and onion mixture
    • Toss gently to ensure all pieces are evenly coated with dressing
    • Chop the fresh parsley, chives, and dill finely and set aside
    • Add chopped parsley, chives, and dill to the salad mixture
    • Toss again gently to distribute the herbs throughout the salad
    • Let the salad sit in the refrigerator for at least 30 minutes to allow flavors to meld
    • Taste before serving and adjust seasoning with additional salt or pepper if needed
    • For plating, gently mound the salad in the center of a chilled shallow bowl or plate
    • Sprinkle additional fresh herbs over the top for color and aroma
    • Serve chilled as a starter or light main dish, optionally accompanied by rye bread or boiled potatoes
