    Ingredients

    • 2 herrings, filleted
    • 1 large red onion, thinly sliced
    • 2 tablespoons extra-virgin olive oil
    • 2 tablespoons white wine vinegar
    • 1 teaspoon sugar
    • 1 teaspoon sea salt
    • 1/2 teaspoon freshly ground black pepper
    • 2 tablespoons chopped fresh parsley
    • 2 tablespoons chopped fresh chives
    • 2 tablespoons chopped fresh dill

    Method

    • Filter the herring and thinly slice the onion to prepare Herring and Onion Salad. 
    • Combine the herring, onion, olive oil, white wine vinegar, sugar, salt, and pepper in a large bowl. Mix well to combine.
    • Finally, garnish the salad with chopped parsley, chives, and dill. 
    • Serve immediately or refrigerate for later.
