    • Let fish sit at room temperature for 10–15 minutes to allow seasonings to penetrate
    • Pour oil into a heavy frying pan or skillet to a depth of about 1/2 inch (1.5 cm)
    • Heat oil over medium-high heat until it shimmers or reaches 175°C (350°F) on a thermometer
    • When oil is hot, gently lower fish pieces into the pan, avoiding crowding the pan (work in batches if needed)
    • Fry fish for 3–5 minutes per side, turning only once, until golden brown and internal temperature reaches at least 63°C (145°F)
