    Method

    • Begin by seasoning the John Dory fillets with salt and pepper. 
    • Heat a pan over medium-high heat and add some olive oil. 
    • Once the oil is hot, add the garlic cloves and fry for a few minutes. 
    • Add the John Dory fillets to the pan and fry for a few minutes on each side. 
    • Once cooked, add the orange, thyme and white wine to the pan and simmer for a few minutes. 
    • Finally, add some butter and lemon juice to give the dish a delicious finish.
